We made it to 2022! I am always happy with the fresh start the new year brings. I never set a resolution, but I do like to have a list of goals to work toward during the year. One of my goals this year is to take as many of my bread recipes as I can and make them sourdough. Fermenting your dough adds so many health benefits plus a flavor that just can’t be beat. So I went over my most baked bread recipes, and one of the first I decided to switch to sourdough were hoagie sandwich rolls. These homemade sourdough sandwich rolls are sure to take your sandwiches to the next level! They’re soft with that signature tang from sourdough that you know and love. Fill them with your favorite sliced meats and cheeses, or do what my kids love and use them for sloppy joes. The possibilities are endless!
Why Sourdough?
Like I stated before, sourdough has many health benefits which is why I’m trying to make all my recipes sourdough. Sourdough is made by fermentation which provides beneficial bacteria for your gut. Everyone knows these days that many health issues can arise from problems in the gut. Also, sourdough is easier to digest because the fermentation essentially pre-digests the wheat. This makes all the vitamins and minerals readily available for your body to absorb. Another thing I love about sourdough bread is I can make a delicious, nutritious loaf for my family just from flour, salt, and water. There are no funky preservatives or ingredients that we have no idea what they are in our bread.
Making the Rolls
To make these homemade sourdough sandwich rolls, you’ll need to have an active sourdough starter. Learn to make your own sourdough starter here: Sourdough Starter from Scratch Make sure it has been fed at least in the last 12 hours. It should be nice and bubbly. I love this recipe because I basically just dump everything into the mixer and let it do all the work for me. The next morning I get to work shaping the dough. This is absolutely one of my favorite doughs to make. It’s so soft and easy to work with. Here’s how you do it:
- Mix starter, sugar, water, salt, and butter together in the bowl of a stand mixer. Add the flour one cup at a time allowing it to incorporate before adding the next bit.
- Let the mixer knead the dough for about 10 minutes. You want this dough to reach the window pane stage. When you stretch the dough thin, you should be able to see through it.
- Put the dough in a greased mixing bowl and cover with plastic wrap. Allow to rest overnight at least 8-12 hours.
- In the morning, cut the dough into six equal balls.
- Stretch or roll each ball into rectangles. I stretched mine to about five inches. Fold the bottom edge up toward the center and press down. Next, fold the top edge down and pinch the seam together. Then turn the dough over and lightly roll it back and forth to smooth down the seam.
- Place the rolls on a parchment lined baking sheet and cover with a damp towel. Let them rest until doubled in size. This time will vary depending on how warm your kitchen is.
- When doubled, score with a sharp knife or blade down the center. Bake at 375° for 15-20 minutes.

- 2 tsp salt
- 3 1/2 cups flour
- 1/4 cup butter melted
Instructions

- Allow the mixer to knead the dough about 10 minutes.
- Cover the dough with plastic wrap and set overnight. Allow it to rest 8-12 hours.
- In the morning, cut the dough into six equal balls.
- Stretch or roll the balls into rectangles. I stretched mine to about five inches.
- Pull the bottom edge up toward the center and press down the seam.
- Next, pull the top edge town and pinch the seam together.
- Turn the dough over and lightly roll it back and forth to smooth the seam.
