Easy Homemade Marshmallows

  • 2/3 cup cold water
  • 4 Tbsp gelatin
  • 1 tsp vanilla extract
  • 1 1/3 cup maple syrup
  • pinch salt


  • Combine water and gelatin in a small saucepot. Bring to a simmer then set aside.
  • In the bowl of a stand mixer, combine syrup, vanilla, and salt using the whisk attachment. Add the gelatin mixture with the mixer set on low. Slowly increase the speed of the mixer until you reach high.
  • Whisk the mixture until it reaches soft peaks.
  • Spread the marshmallow mixture into a well greased baking dish so the marshmallows don't stick. Place the baking dish in the refrigerator until the marshmallows are set. I usually wait about an hour.
  • Slice the marshmallows. Toss in powdered sugar or cornstarch to keep them from sticking together.
